Oven: Inconsistent Heating

An oven that cannot hold a steady temperature is one of the most frustrating appliance problems in the kitchen. Baked goods burn on the outside while remaining raw in the centre, roasts take far longer than expected, and every recipe becomes a guessing game. Understanding the causes of inconsistent oven heating will help you decide whether a simple fix will restore performance.

The bake element is the most common point of failure in electric ovens. It runs along the bottom of the oven cavity and is responsible for the majority of the heat during baking. A failing element may glow unevenly, show visible cracks or blisters, or simply stop glowing entirely while the oven still appears to be on. Replace the element with a manufacturer-matched part and the oven will typically return to accurate, even temperatures immediately.

The temperature sensor probe monitors the air temperature inside the cavity and signals the control board to cycle the heating elements on and off. If the probe is bent, touching the oven wall, or has developed resistance outside the manufacturer's specification, the control board receives inaccurate readings and the oven either overheats or fails to reach the set temperature. Test the probe with a multimeter and replace it if the resistance reading does not match the chart in your service manual.

In gas ovens, inconsistent heating usually points to the igniter. The igniter must glow bright enough to open the gas safety valve before gas can flow and ignite. A weak igniter draws insufficient current, the valve opens slowly or partially, and the burner produces less heat than required. If your gas oven takes more than ninety seconds to light or produces a noticeably weak flame, the igniter is almost certainly the culprit.

Oven door gaskets seal the cavity and prevent heat from escaping around the door. A torn, hardened, or poorly seated gasket allows heat to bleed out continuously, forcing the elements to work harder and causing the temperature to fluctuate. Run your hand around the door edge while the oven is hot — any warm air escaping indicates a compromised seal. Gaskets are inexpensive and straightforward to replace on most models.

Before calling a technician, it is also worth calibrating the oven. Place a reliable oven thermometer in the centre of the cavity, set the oven to 180 °C, and allow it to run for twenty minutes after the preheat indicator turns off. Compare the thermometer reading to the set temperature. Most ovens allow a calibration offset of up to 35 degrees to be programmed through the control panel — consult your owner's manual for the specific procedure.
