Cooktop: Uneven Heating
A cooktop that scorches food on one side of the pan while leaving the other side undercooked makes consistent cooking nearly impossible. The cause depends heavily on whether you have a gas, electric coil, glass-top radiant, or induction cooktop, since each uses a completely different heating method.
On electric coil and glass-top radiant cooktops, uneven heating is most often caused by a single heating element that has partially failed. A coil or radiant element with a break in only part of its internal wire will still glow, but at reduced and uneven intensity across its surface. Swapping the suspect element with a known-good one from another burner position, then checking whether the problem follows the part, is a reliable way to confirm which element has failed.
The infinite switch, which controls how long the element cycles on versus off to simulate different heat levels, can also fail in a way that causes uneven or inconsistent heat rather than a complete loss of heat. If the burner seems to surge unpredictably between very hot and barely warm rather than holding a steady medium setting, the switch is a likely culprit.
Induction cooktops heat the pan directly through electromagnetic induction rather than heating an element, so uneven heat usually points to a warped pan base that isn't making full contact with the surface, or in rarer cases a failing induction coil or its associated power electronics. Always test with a pan the manufacturer confirms is induction-compatible before assuming the cooktop itself is at fault.
On glass-top cooktops specifically, check for a cracked or chipped surface directly over the affected burner. Even a small crack in the glass can prevent proper thermal contact between the radiant element below and the cookware above, creating a cold spot that looks like an electrical fault but is actually a physical surface issue requiring glass replacement.
